Rossese

This is a typical wine from western Liguria, recognised as DOC on 31-03-1988. The vine variety is autochthonous, it is the same as that of Rossese di Dolceacqua, but the wine made from vines grown outside the Dolceacqua area has different characteristics and takes on its own denomination: Rossese DOC Riviera Ligure di Ponente.

ORGANOLEPTIC CHARACTERISTICS

COLOUR

Light ruby red

PERFUME

Intense and continuous, it expresses itself in a broad and personal bouquet with hints of dried roses, wild strawberries, currants and blackberries.

TASTE

Savoury, dry, delicately fruity. 

WINEMAKING

Traditional fermentation with stemming at a temperature of 24-25°C for 4 days. Afterwards, racking and pressing are carried out using a low-pressure horizontal press.
The result is therefore a wine that is not very tannic, passable and drinkable.

It goes perfectly with vegetable ravioli, stuffed cabbage, rabbit Ligurian style and stewed stockfish.

ROSSESE

This wine is made from the soft pressing of Rossese grapes and other local white varieties, which have always been cultivated in the family's vineyards. The colour is clear with faint ruby reflections. Its fruity perfume, characteristic of the vines that make it up, brings back aromas of wild berries mixed with those of field grasses typical of Liguria. The taste is dry, pleasantly soft and ready to drink. It is ideal as an aperitif and suitable for any combination with meat, fish and vegetable dishes.
