Vermentino
Vermentino is a Ligurian wine recognised as DOC on 31-03-1988. The vine is of Middle Eastern origin, passed through Spain and transplanted to Corsica in the 14th century, from there it spread to Sardinia and then landed in Tuscany and spread throughout the Ligurian arc. In the temperate climate of the coast it has found the ideal environment for cultivation, as it does not like the cold climate that hinders its development. Without a doubt, we can say that the best results are obtained in the province of Imperia, especially in the Diano area and the Bussana area.
ORGANOLEPTIC CHARACTERISTICS
COLOUR
Pale straw yellow
PERFUME
Fresh and subtle with hints of wild flowers and herbs, especially rosemary and thyme, mixed with the fruitiness of apricot and pineapple, with good intensity and persistence.
TASTE
Fresh, persistent and pleasantly soft.
WINEMAKING
The product involves traditional winemaking, with the focus on two fundamental precautions:
- reduce the must - marc contact to a few hours to obtain the aromas
typical from the skins and a moderately intense colour.
- control the alcoholic fermentation of the must, with the help of a refrigerator, at
temperature of around 20° C, to increase and maintain the characteristics
typical of the grape variety. The result is a wine of about 12° alcohol.
It is recommended with raw, grilled, boiled, baked fish and white meat.
