Pigato
Pigato is an autochthonous wine, typical of western Liguria, recognised as DOC on 31-03-1988. Of Middle Eastern origin, it moved to Europe, developing mainly in Liguria and finding its natural habitat in the province of Imperia and in the alluvial plain of Albenga.
ORGANOLEPTIC CHARACTERISTICS
COLOUR
Straw yellow
PERFUME
Broad, intense and persistent, with hints of yellow peach, acacia honey and broom flowers.
TASTE
Full-bodied, full-bodied, tasty, dry, but soft with long continuity and a pleasant, typically bitter aftertaste.
WINEMAKING
The product involves traditional winemaking, with the focus on two fundamental precautions:
- reduce the must - marc contact to a few hours to obtain the typical aromas from the skins and a moderately intense colour.
- control the alcoholic fermentation of the must, with the aid of a refrigerator, at a temperature of around 20° C, to increase and maintain the typical characteristics of the grape variety. This results in a wine of approximately 12° alcohol.
It is perfect as an aperitif or combined with trofie al pesto, fritto misto, triglie alla livornese and all stews.
